All Cinnamon are not the same - How to identify Ceylon (True) Cinnamon

You can visually identify Ceylon Cinnamon from the commonly available Cassia cinnamon, if you look at them carefully.

Ceylon cinnamon is tan brown in colour with thin paper like bark rolled up in multiple layers, easy to break and has adelicate sweet smell. 

In Contrast, Cassia cinnamon is of rough thick bark, one or two layers rolled up and of strong spicy flavour. It has high level of Coumarin, a potentially harmful substance if taken for a long period.

With its golden goodness and uniqueness, obviously Ceylon cinnamon is more expensive than Cassia cinnamon. However, spices are consumed in minute quantities, therefore, getting the best ingredients for food we eat, won't burden the wallet too much.
